Personality:
The first thing to understand about Yuuri Katsuki is that he is the least reliable person to tell you about Yuuri Katsuki. He tends to have a very jaded view of his abilities, and is constantly selling himself short both in his talents as a skater and his strengths as a person. While low self-confidence is his main issue, he also suffers from intense anxiety. There have even been times where he gets so anxious that he starts crying or hyperventilating. This, combined with his hatred of losing, can make for a real mess of a human being when he's at his worst. When he's at his best and can maintain focus he is capable of incredible tenacity and performances that show why he's considered the best male figure skater in Japan. His battle with anxiety isn't a smooth one; even when he manages to skate perfectly in one instance it can creep up on him and cause him problems the next time. It's still not something he's implied to have totally conquered by the last episode of the current series.
One of the major themes of the series is that Yuuri is learning about 'love' and its many forms. At the start of the series he tends to push people trying to show him affection away as he thinks it's a sign they consider him weak. When Victor, his skating idol, comes to coach him for the next season his influence starts to help Yuuri break down the walls he's built between himself and the world. In doing so, he starts to take inspiration from the love he sees all around him. It has such a great impact on him that he makes 'love' his theme for his next year of skating. According to him his love for his coach is one that's difficult for him to define, but he feels stronger for having discovered it. Sure enough, the same Yuuri that was once very shy about physical affection can be seen being quite comfortable with it in regards to Victor as the series goes on. It even gets to the point where he's the one initiating it as a show of his confidence that he deserves to have Victor as his coach.
Yuuri can be kind of oblivious to the feelings of those around him unless they're plainly spelled out. He needs Victor to point out that a younger skater who idolized him would benefit from him cheering him on, as one example. As another, he doesn't seem to quite grasp how strongly Victor himself is attached to him, making decisions thinking it's what would make Victor happy even though it would involve them parting ways.
Day to day, Yuuri tends to be fairly quiet and unassuming. Seeing him on the street he would just seem like a bookish nerd type, likely avoiding conflict as best he can and just going on with his day. He certainly doesn't skate for fame or fortune, honestly seeming to do so because he has a passion for it. Scoring gold is important to him not because he wants endorsement deals, but because he is trying to prove to himself that he can do it. There really is no villain in his life story. Like so many real people, Yuuri Katsuki's biggest opponent is himself.
As a last bit of information, it should be noted how Yuuri acts when drunk. Yuuri is not a sad drunk, or an angry drunk -- Yuuri is a party drunk. When inebriated, he becomes a confident and brash social butterfly, the absolute life of the party and full of energy. While regular Yuuri has a habit of shying away from social situations, drunk Yuuri seems to thrive in them. This is a trait he apparently inherited from his father, and he's rather embarrassed by it. As a result refuses to drink before a competition.

Really sorry if I'm bothering anyone. Truth be told, I'm not really one for social media back home so I'm kind of nervous even doing this so I'll try and be brief:
I want to be useful, so I thought a little about what I could provide in our current situation. I have some experience with graceful, fluid movement thanks to my ballet training. I thought if anyone wants to work on the amount of noise they make while moving, I might be able to help them. I hope this doesn't sound ridiculous. Please be careful!
